Day 3 of MyPlate challenge: Photo update

In the beginning of the week, I started a weeklong challenge to eat closely to MyPlate on a budget of $61.27. I wanted to see if I could mimic the food icon, eating vegetable, fruits, protein, dairy and grains, while watching my wallet.

The photo above was breakfast. Sautéed spinach and portobello mushrooms scrambled with an egg and mixed with cheese and salsa. The blackberries were a side, but they're hard to see.

For lunch, this was a salmon burger, with mustard and spinach on wheat bread. For dessert, cantaloupe.

Just because the foods are in different containers, it doesn't mean I'm eating them separately, especially with the veggie egg scramble and the burger. I wanted to show different food groups.

For dinner, it was pizza time. This was a thin-crust veggie pizza with broccoli, tomatoes and onions and a slice of supreme pizza with sausage, tomatoes and peppers. Then a salad with cucumbers, mushrooms and onions, and a side of cantaloupe.

Spinach was present in all three meals, but that's what happens when you've got a big bag of produce to finish.
